North African Fish Stew




This is a very easily prepared dish that tastes fantastic. 



Ingredients


  • 2 tablespoons olive oil
  • 1 teaspoon cumin seeds
  • 1 cinnamon stick
  • 1 onion, chopped up
  • 1 chilli, chopped up
  • 2 cloves of garlic, chopped up
  • 2 teaspoons grated fresh ginger
  • ½ teaspoon ground turmeric
  • ½ teaspoon ground coriander
  • 200g chickpeas
  • 300g fresh tomatoes, chopped up
  • 500g/1lb 2oz white fish fillets (e.g. cod or snapper) cut into chunks
  • 2 teaspoons honey

Preparation method 

 

  1. First cook the chickpeas. Drain excess water and set aside.
  2. Heat up the olive oil in a sauce pan. Add the cumin seeds and cinnamon stick and fry till they begin to crackle.
  3. Throw in the chopped onion and cook until it is browned. Then add the garlic, chilli and ginger and the ground turmeric and coriander. Cook for another one minute.
  4. Add the chopped tomatoes and water and cook for ten minutes.
  5. Add the fish and simmer until the fish is almost cooked through and tender.
  6. Add the chickpeas and honey and cook for a further 2-3 minutes.
  7. Spoon out into bowls and serve with crusty bread. Optionally, you may garnish the stew with either fresh coriander leaves or a slice of lemon (or both), and serve with couscous.
