Amatriciana Sauce Recipe

Pasta is one of the most economical and easily cooked dishes that you can cook for yourself.



The easiest and most straightforward kind of pasta sauce is the old favourite i.e. Bolognaise. But if you get tired of it, this is a nice, spicy alternative.


Ingredients


  • 3 tablespoons of olive oil
  • 120g of bacon or pancetta
  • 1 onion, chopped up
  • 1 red chilli, chopped up
  • 2 cloves of garlic, chopped up
  • 1 tin of chopped tomatoes (400g)
  • 1 teaspoon sugar (optional)

     

    Preparation method 

  • Chop the bacon up into small pieces about 5mm thick.
  • Heat up the olive oil in a sauce pan. Add the onion and fry till it is caramelised.
  • Throw in the garlic and chilli and cook for one minute.
  • Add the bacon and cook till it becomes slightly crispy on the edges.
  • Then add the chopped tomatoes. Leave the sauce to thicken over a low heat for 30 minutes.
  • Add the sugar if desired.


    Pour over cooked pasta and serve with grated cheese and chopped parsley.
