Japanese Okra Salad

Japanese meals are about the cheapest, most easily made, and most nutritious that you can make. This Okra Salad is a perfect accompaniment that you can whip up in a few minutes to go along with a standard meat dish like Chicken Teriyaki or Japanese Ginger Pork, or it can just be eaten with boiled rice as a light meal.



It includes some minor modifications like adding a bit of garlic and ginger that I have added on my own.


Ingredients


  • 1 tablespoon of vegetable oil
  • 10-15 okra 
  • ½ teaspoon fennel seeds
  • 1 clove of garlic, chopped up
  • 1 teaspoon grated fresh ginger
  • 3 teaspoons soy sauce 
  • 1 teaspoon sake (optional)

     

    Preparation method 

  • Discard the okra stems, then slice them diagonally and set aside.
  • Heat up the vegetable oil in a sauce pan. Add the fennel seeds and fry till they begin to crackle.
  • Throw in the garlic and ginger and cook for one minute.
  • Add the sliced okra and cook for three to four minutes.
  • Add the soy sauce (and sake if desired) and mix thoroughly. 
  • Allow to cool then store in the refrigerator.


    Serve with boiled or steamed rice.
